HEALTHY BANANA BREAD

This recipe is so yummy the picky eater of my family asks for seconds!

The best part is; it has no “sugar” in it!

I am not a chef or baker. I am a mom on a mission to create food that has great taste and is healthy with no “sugar”.

I have two really good reasons for my mission. First, I have a super picky eater in my house and I have to get creative if he is going to eat healthily. The second one is that in the last year, I have developed severe reactions to “sugar” and many of its replacements.

Healthy Banana Nut Bread1 cup unbleached all-purpose flour 3/4 cup whole wheat flour 2 1/2 teaspoons baking powder 1 teaspoon coarse sea salt 1 cup coconut flakes (process them in the blender with a chopping blade) 1/3 cup apple cider 1 large lightly beaten egg 1 cup mashed ripe bananas 1/2 cup milk 1/3 cup butter softened 1/2 cup chopped pecans (optional)

 Prep Time15 Minutes Cook Time50 Minutes Servings LoafINGREDIENTS1 cup unbleached all-purpose flour3/4 cup whole wheat flour2 1/2 teaspoons baking powder1 teaspoon coarse sea salt1 cup coconut flakes process in a blender with a chopping blade1/3 cup apple ciderlarge lightly beaten egg1 cup mashed ripe bananas1/3 cup Honey1/2 cup milk1/3 cup butter softened1/2 cup chopped pecans optional

INSTRUCTIONS

  1. Combine first four ingredients in a large mixing bowl.
  2. Combine next six ingredients
  3. Add moist ingredients to dry ingredients. Stir just until moist
  4. Add Pecans at this time.
  5. Pour into ungreased 8 1/2″ x 4 1/2″ loaf pan
  6. Bake at 350 degrees for 50 minutes or until wooden pick inserted in the center comes out clean.
  7. Cool in pan on cooling rack for 15 minutes then serve.
