OATMEAL CAROB CHIP COOKIES

Who doesn’t like cookies!

I for one am a huge cookie, cake, anything sweet lover.  When at an event, my favorite time is dessert.  About a year ago, I cut sugar out of my diet. Since I removed sugar from my diet, I feel amazing!  Sugar is a huge contributor to so many chronic illnesses.  If you want to read more about why I cut sugar out of my diet, please read my post A Sugar-Free Me.

The problem for many of us, including me, is that cutting sugar out of your diet really limits the number of cookies and cakes to zero. You either eat the sugar filled treat or eat the “Sugar-free” options that taste horribly. This makes going to special events difficult. I knew that there must be a way to satisfy my sweet tooth without compromise so I decided to create my own recipes that did not contain sugar but still taste amazing. Matter of fact, I make these for guests and events. People don’t even know they are sugar-free. I never have any leftovers. I even let my kids eat them freely as snacks.

The cookies are sweetened with carob chips, unsweetened coconut flakes, a small amount of apple cider, and honey. Honey in the raw is considered a superfood. It has many health benefits, and your body process’ it different than sugar.

Why is Honey different from Sugar

Bare with me for a moment as I detour into honey versus sugar for a moment.

To digest sugar, your body first needs to break down the sugar into fructose and glucose molecules. Then the fructose has to be further broken down into glucose. Then your body can absorb it. That is a lot of work for your body.

Honey is much different. The glucose and Fructose molecules are not linked, therefore, your body does not have to break down the molecules for absorption. It is much easier for your body to process.

We need to feel great every day and diet is a big player in that. Changing your diet doesn’t have to be full of all the things you can’t eat. We just have to change the ingredients. This recipe is the first of many to come. There are so many natural foods that we have forgotten about because of the processed foods we consume each day. I plan to reintroduce the amazing natural foods that we have put to the side for so long so we can all live healthy and happy without depriving ourselves of the foods we love. 

These cookies are absolutely amazing. Try them for yourself and you will see that sugar-free can be just as good as the desserts we have all grown to love.

 Coursedessert Prep Time20 minutes Cook Time15 minutes Servings dozenINGREDIENTS1 1/2 cups Rolled Oats Blend in a blender to flour consistency2 cups whole wheat flour2 teaspoons Baking Soda1 teaspoon course sea salt1 cup Melted Butter1/2 cup Honey1 cup unsweetened coconut flakes Blend in blender. This allows for natural moisture to come out and has consistency of brown sugar3 Eggs2 tablespoons apple cider3 tablespoon water1 tablespoon Flaxseed2 cups Carob Chips

INSTRUCTIONS

  1. Mix Water and Flaxseed together and let sit for 10 minutes
  2. Combine first four ingredients into a mixing bowl
  3. With a chopping blake in a blender (I use a magic bullet), blend unsweetened coconut flakes until they are fine granules. (This allows moisture to be released, giving the coconut flakes a similar consistency to brown sugar.
  4. In a separate mixing bowl mix: melted butter, honey, unsweetened coconut flakes, eggs, apple cider, and flaxseed/water mixture until well blended.
  5. Combine Wet and dry ingredients and blend well.
  6. Add in Carob Chips.
  7. Mix until everything is blended
  8. On ungreased cookie sheet place about a tablespoon amount of dough for each cookie leaving 1 1/2″ inbetween.

RECIPE NOTES

Pre-heat oven to 350 degrees.

Cook for 15 minutes
