SHEPHERD’S PIE

Shepherd’s pie was originally named after the poor shepherds that tended the flocks in the field. They would use whatever ingredients they had on hand and cook them up together. I like that it is such a diverse dish and can be used with many different ingredients. For instance, I may have had a pot roast the night before and I have mashed potatoes from another night that week. I can use the pot roast meat, make gravy out of the broth from the pot roast and add it to veggies and the mashed potatoes. Or I could use ground beef or turkey as the meat and add some cheese to it. The secret is the layers you create with your ingredients.

INSTRUCTIONS

  1. In a medium skillet, over medium heat, cook ground turkey until lightly browned.
  2. In a medium saucepan, melt butter and saute onions until onions are tender.
  3. Add chicken broth to your sauteed onions and whisk
  4. Sift flour into chicken broth and whisk until gravy thickens
  5. In a small saucepan, over medium heat, cook frozen vegetables until tender.
  6. In a medium-sized casserole dish spread out one cup of mashed potatoes on the bottom.
  7. Drain Ground turkey and pour evenly into the cassarole dish.
  8. Drain vegetables and evenly pour into the casserole dish.
  9. Pour gravy evenly over everything in the cassarole dish.
  10. Evenly dispurse Mashed potatoes over top of ingredients in the cassorole dish.
  11. Sprinkle paprika on top of the casserole.
  12. Cook at 350 degrees for one hour or until the potatoes are golden brown.

RECIPE NOTES

Pre-heat oven to 350 degrees

Remember that this recipe is very versatile. You can replace the meat with anything you have on hand (I like to use leftover meat from another meal) When this meal is in my meal plan for the week, I will have a meal earlier in the week that includes mashed potatoes so I make extra that day to use in my Shepherds Pie.
