HOMEMADE CHICKEN POT PIE

Dinner on our farm is eaten together as a family so it is important with our busy schedule to have meal plans that are easy to make. This recipe is something I make often and many of the ingredients I use, come from a previous meal so prep time is quicker. You can use chicken and broth leftovers from your whole chicken dinner. That’s two ingredients already done!

 CourseMain Dish Prep Time25 minutes Cook Time50 minutes Servings peoplesINGREDIENTS2 cups shredded chicken10 ounces Frozen mixed vegetables2 tablespoons butter1/2 cup onions (chopped)1 1/2 cups chicken broth1 tablespoon unbleached all-purpose flour1 teaspoon Pepper2 pie crusts can be store bought or homemade If pie crust is store bought bring them to room temperature before using

INSTRUCTIONS

  1. In small saucepan, cook frozen vegetables on medium heat until tender
  2. In medium to large saucepan over medium heat, add butter and onions Saute onions until soft
  3. Add chicken broth to sauted onions and wisk
  4. Sift flour into broth and onions and wisk until thickened and turned to gravy
  5. Add shredded chicken, cooked vegetables, and pepper to medium to large saucepan and mix well with gravy
  6. Lay one pie crust on the bottom of your pie pan and pour chicken and vegetable mixture into pie pan.
  7. Lay the second pie crust on top of filling in pie pan and crimp the edges together with the first pie crust.
  8. Cut slits in the top to allow air to escape.
  9. put tin foil around the edges to prevent them from over cooking.
  10. Cook 40 minutes then remove tin foil from edges and cook for 10 more minutes or until crust is lightly browned
  11. Remove Chicken Pot Pie from oven and let sit 15 minutes before serving
