HEALTHY CASHEW BUTTER COOKIES


This recipe is a little twist on the ever popular Peanut Butter cookie.

Although most of us eat Cashews whether topping a dish or plain as a snack; people don’t generally bake with it. I was inspired to create this recipe because as a family, we eat a lot of things made with peanut butter. Peanut butter is delicious, but I was looking for a fresh taste, something different than what we have been eating.

Cashew butter can be found in most grocery stores. l like the Trader Joes brand. Make sure to look at the ingredients because just like peanut butter, the shelf carries cashew butter that contains added ingredients. We want to make sure that we are using pure cashew butter without any added ingredients to keep these cookies as healthy as possible.

 Coursedessert Prep Time15 Minutes Cook Time8-10 Minutes Servings dozenINGREDIENTS1 Cup Creamy or Crunchy Cashew Butter1 Cup Rolled Oats Blended in a blender to a flour like consistancy1/4 Cup Honey1 Teaspoon Baking Soda

INSTRUCTIONS

  1. Preheat oven to 350 degrees
  2. Line your baking sheet with parchment paper.
  3. In a large bowl, mix Cashew butter and Honey,
  4. Stire in Oat flour (blended rolled oats) and baking soda to your cashew and honey mixture until well blended.
  5. Scoop tablespoon size balls of dough onto the lined cookie sheets about 2 inches apart.
  6. With a fork press flat in a crisscross pattern.
  7. Bake on the middle rack for 8-10 minutes until lightly browned.
  8. Remove cookies from oven and let cool on a cooling rack.
